Mango Millet Porridge

Full of Beautifying Minerals!

Quick and easy!

Gluten free! Dairy free! Vegan! Alkalising! Kosher certified!

As the spring sun seems to have taken a leave of absence here in Herts, I've been craving a more comforting breakfast to warm me through. This one is brilliant! Adapted from  Kris Carr's book Crazy Sexy Kitchen, it keeps me satisfied well into lunch time.
Unlike oats, millet doesn't encourage yeast overgrowth or candida. It's a great way to get beautifying minerals into you, minerals that most of us are deficient in. Minerals that give you boundless energy. (For the ladies, I find myself in need of more minerals around my time of the month. Particularly the Bs.)
You can find millet in most good health shops.

Recipe - for One

1/4 cup of millet
5 pieces of frozen mango ( you can buy frozen mango in Tesco)
1 1/4 Good Hemp Milk (sold at Tesco and Waitrose, is my personal favourite, but you can use your favourite dairy free milk alternative)
3/4 tsp of vanilla bean powder
2 big pinches of cinnamon
A large pinch of good quality coarse sea salt

Put the millet, vanilla, cinnamon, salt and 1 cup of the milk in saucepan.
Bring to the boil. Stir.
Simmer gently for about 10 minutes, until most of the milk has been absorbed and the millet is plump, stirring regularly.
Add the mango and the rest of the milk.
Simmer for another 5 minutes, or until the mango is thawed.
If all the milk is absorbed, add a bit more, you want it nice and moist. Yum!
